Banana & Walnut Honey Cakes

1 or 2 mashed banana(s)
150 ml runny honey
150 ml oil – (any nut oil or veg oil)
3 eggs
150gms walnuts (finely chopped in a food processor)
150gm plain flour
150gm wholemeal flour
5 tsp baking powder

  • Mix the 1st 4 ingredients together in a bowl beat well to thoroughly mix in the eggs.
  • Add the dry ingredients and mix together.
  • Put the mixture into 24 small cake cases or 12 large muffin cases
  • Bake at 190°C for 15-20 minutes for the small cakes – maybe a little longer for muffins.
